Monk Way of the Dragon Disciple (my version, anyway).
This is will take a bit of vision from emulating a dragon, but also a lot from the dragon slayers from the Fairy Tail anime.
Thoughts, ideas and criticism welcome, details to come!

Dragon Disciple:
Starting when you choose this tradition at 3rd level, you have dedicated yourself to emulating a certain breed of dragon. Choose one of the types of dragon listed below. The damage type associated with each dragon is also used by features you gain later.
Roar of the Dragon:
Starting at 3rd level, you can use your ki to emulate the breath weapon of a dragon. As an action, you can spend 2 ki points to exhale destructive energy. Your choice of dragon determines the size, shape and damage type of the exhalation, as shown in the table above. When you use your breath weapon, each creature in the area of exhalation must make a saving throw, the type of which is determined by the breath weapon column from your choice of dragon. A creature takes 2d6 damage on a failed save, plus an additional 1d6 damage for each additional ki point you spend. On a successful save, the creature takes half as much damage.
Hunger of the Dragon:
From 6th level, you are resistant to the damage dealt by your choice of dragon. You gain resistance to the damage type dealt by your choice of dragon.
Additionally, whenever you take damage of the same type associated with your choice of dragon, you can capture some of the incoming energy, storing it for your next attack. Using your reaction and spending 1 ki point, the first time you hit with a melee attack or use one of your other dragon abilities on your next turn, the target(s) takes an extra 1d6 damage of the same type as your choice of dragon, plus an additional 1d6 damage for each additional ki point you spend, and this effect ends.
Wings of the Dragon:
At 11th level, you gain the ability to sprout a pair of dragon wings from your back, gaining a flying speed equal to your current speed. You can create these wings as a bonus action on your turn, spending 1 ki point to do so. You can't manifest your wings while wearing armor unless the armor is made to accommodate them, and clothing not made to accommodate your wings might be destroyed when you manifest them.
Whilst you have your dragon wings manifested, you can buffet nearby creatures with them. As an action, you spend 2 ki points and each creature within 15 feet of you must make a Dexterity saving throw against your Ki save DC. On a failure, a creature takes 2d6 + your Strength modifier in bludgeoning damage, plus an additional 1d6 damage (of a type appropriate for your choice of dragon) for each additional ki point you spend, and be knocked prone. On a successful save, a creature takes half this damage and is not knocked prone.
Essence of the Double Dragon:
When you reach 17th level, you select a second type of dragon from the list you chose from at 3rd level, and you gain resistance to that second type of damage. If you select a dragon that uses the same damage type as the first, you instead gain immunity to that damage type. Whenever you would use a dragon disciple ability, you can choose between your first or second type of dragon.
Additionally, you can spend 3 ki points and use a bonus action on your turn to harness the combined spirits of your two types of dragons simultaneously. For up to 1 minute or until you lose your concentration (as if concentrating on a spell), whenever you spend ki points to increase the damage you would do from one of your dragon disciple abilities, you deal an additional 1d6 damage per ki point spent. This additional damage must be of type appropriate to the choice of dragon you did not originally use for that ability.
You can this ability once per long rest.
